Vanilla bean cupcakes - Versatile vanilla cake: Sooo delish and fantastic

Vanilla beans: This versatile vanilla cake is really a beautiful Christmassy creation, and a doddle to make. This delicious dessert doesn’t need just to be brought out as a festive flourish for a supper party, but can be gratifyingly baked and left to preside grandly over your kitchen, commanding anyone to have a slice, damply plain, or toasted, by way of a seasonal treat. To make it into a Spruced-up spice cake, even more seasonal and just as good, but with less appeal to kids, just halve the vanilla beans and add 2 teaspoons each of ground cinnamon and ginger and a half teaspoon of ground cloves. This highly delicious scented vanilla cake is simply irresistible slathered with your favorite frosting or layered in whipped cream and strawberries.

Ingredients to be used to make Cake:

  • Sugar - 2 cups,
  • Eggs – 4 large,
  • All-purpose flour - 2-1/2 cups,
  • Milk - 1 cup,
  • Vegetable oil - 3/4 cup,
  • Baking powder - 2-1/4 tsp,
  • Vanilla – 1 tsp,
Directions:
  1. Preheat your oven to 350 degrees F (180 degrees C). Line the rectangular baking pan with parchment paper. Grease the paper and all the sides of the pan well.
  2. Beat together the sugar and eggs until slightly thickened, about 1 minute in a large mixing bowl, with an electric mixer. Add flour, milk, oil, baking powder, and vanilla and beat the mixture for another one minute, just until the batter become smooth and creamy. Don't overbeat. Pour batter into your baking pan.
  3. Bake the cake mixture in preheated oven for 30 to 40 minutes or until the tops are golden and a toothpick poked into the center of the layer comes out clean. And then loosen the sides of the cake from the pan by making use of a thin knife, then turn out onto a rack and peel off the paper. Let the mixture to cool completely before covering with frosting, if needed.
